Thanks to our team, we can work together to make our dream a reality and offer our guests a one-of-a-kind inn experience.

The Höhwald Inn opened on December 15, 1985, under the management of Thomas Weber. Since then, the inn has been known as a convivial destination and a welcoming place for everyone. Over the years, the dining room and the Stübli have evolved into the cozy atmosphere they have today.

Reto and Reini, for example, built the open fireplace, which remains a highlight of the dining room to this day.

The hosts continue to shape the inn to this day. Mara & Thomas Graef have been at the helm since 2023. With their warm hospitality and a special focus on quality and hospitality, a visit here becomes a culinary experience.

A native of Austria, he received top-notch training in his craft in Switzerland. He completed his culinary apprenticeship at the Michelin-starred Shiki restaurant in Vienna, where he learned precision and skill in working with ingredients. In Zurich and Vienna, he expanded his expertise and perfected his knowledge of ingredients. He demonstrated his expertise by earning his Swiss Federal Certificate of Competence as a head chef. Thomas is a passionate chef who strives every day to learn more about his craft and develop his skills. This led him to Brail, where he served as executive chef at the IN LAIN Hotel Cadonau.

Wine expert and enthusiast

Born in Austria, with deep roots in Switzerland. She completed her basic training in Austria, earning a vocational high school diploma in the hospitality and culinary arts. At barely 18 years old, she moved to Switzerland and gained experience as an operations manager in Bern. From Michelin-starred restaurants like TIAN to the 5-star IN LAIN Hotel Cadonau and the Atlantis by Giardino, she successfully applied her expertise and passion for the culinary arts. She completed her training as a certified operations manager in Zurich to ensure she was fully prepared.

Mara and Thomas Graef left “In Lain,” the restaurant run by star chef Dario Cadonau in Brail, because they wanted to strike out on their own. Since late 2023, they have been running a restaurant in Klosters-Monbiel at an elevation of 1,300 meters in an old Graubünden house featuring a modernized, rustic dining room and a panoramic terrace. The dedicated couple’s experience in haute cuisine is evident in Mara’s impeccable service as well as in Thomas’s excellent, seasonal, and regional dishes, which he offers on the menu (three to six courses).

In the Walser village of Monbiel near Klosters, at an elevation of 1,300 meters, stands this charming Graubünden-style house with its cozy, rustic living rooms and a beautiful panoramic terrace. The hosts, Mara and Thomas Graef, have been welcoming guests here since the 2023/24 winter season. As native Austrians with deep roots in the region, they know the mountains inside and out and brought a strong professional background with them to Monbiel. The menu is exciting, featuring contemporary regional cuisine—sometimes hearty, sometimes refined.

This beautiful inn, with its stunning view, is truly cozy. Mara and Thomas Graef have been running the place with great dedication since December 2023, bringing their experience in high-end gastronomy to the table. While the owner warmly oversees the service, the chef prepares delicious seasonal and regional dishes that also reflect influences from the hosts’ Austrian homeland—for example, the classic Tafelspitz served as the Monday special. The terrace is also a wonderful spot. By the way, hot meals are served all day long. Tip for drivers: You can reserve a parking space in the garage.
